Pesto is delicious when made fresh and perfect as a healthy snack with Superseed Crackers. High in protein, fibre and minerals with a taste of summer. Basil is my preferred herb but can be made with coriander and lime juice for an Asian twist, then topped with cooked prawns or chicken for a delicious fancy canape.

Cashews can be substituted with pine nuts, walnuts or almonds.

I have substituted savoury Nutritional yeast flakes for the parmesan to make it vegan. Savoury yeast flakes are a great way to get that cheese like savoury flavour without using dairy.

Vegan Basil Pesto

1 cup roasted salted cashews
1/2 cup olive oil
1 clove crushed garlic
2 tbsp lemon juice
1/3 cup savoury yeast flakes

1 cup fresh basil leaves
1 spring onion sliced
1/2 cup fresh parsley
2 cups baby spinach
Pinch sea salt
Ground black pepper
Place all ingredients into a food processor and blend until well
combined.
Serve with your favourite Superseed cracker!
Can substitute 1/3 cup grated parmesan for the savoury yeast
flakes for regular pesto
