Kia ora Superseed Whānau 

It’s that time of year again, and today we will be sharing some of our favourite ways to enjoy Superseed over the summer holidays. From decadent rocky road to an easy eggplant dip and an exciting new product, we have you covered this Christmas.

It wouldn’t be Christmas without a festive Kiwi classic.

Our Rocky Road is a combination of crunchy Superseed macadamia crackers, salty pistachios, and gooey dried fruit in velvety chocolate.
 
It's a medley for your taste buds that is sure to go down a treat!

Ingredients

  • 250g Dark chocolate
  • 75g Nut butter (our favourite is Fix and Fogg chocolate hazelnut butter)
  • 70g Superseed Macadamia salad toppers or crushed crackers
  • 50g Dried cranberries
  • 50g Puffed cereal we used cornflakes.
  • 50g Flaked almonds
  • 25g Pistachios
  • 25g Dried raspberries (our favourite are from Fresh As)

Method

Begin by melting the dark chocolate in a glass bowl in the microwave. Use full power for 30-second bursts, stirring well between each burst until the chocolate is smooth.

Introduce the Fix and Fogg chocolate hazelnut butter to the melted chocolate and combine until the mixture achieves a smooth consistency.

In a separate bowl, mix together the Superseed Macadamia salad toppers, cranberries, cereal, and almonds.

Gradually add the dry ingredient mixture into the chocolate blend, stirring gently. Once mixed, transfer the concoction into a baking-paper-lined dish.

Sprinkle the pistachios and dried raspberries evenly over the top. Gently tap the dish to help settle the toppings in place. 

Aubergine Dip

Roasted Aubergine Dip (Baba Ganoush). 

 
Elevate your holiday get-togethers with the rich and smoky allure of our creamy Aubergine Dip.
 
Paired with Superseed Crackers, this dish is guaranteed to be a hit at those sunny summer barbecues.

Ingredients

  • 2 Medium eggplant (aubergine)
  • 2 Cloves minced garlic
  • 2 Tbsp tahini paste
  • 2 Tbsp lemon or lime juice
  • ½ Tsp salt
  • 2 Tbsp extra virgin olive oil
  • Smoked Paprika

Method

Preheat the oven in 180° C

Cut the eggplant in halves and place it in an oven dish with the cut side facing up. Drizzle olive oil over the top

Bake for 30 minutes or until the eggplant is dark brown and cooked through.

Remove the eggplant from the oven and leave it to cool

Peel the skin off the eggplant and transfer the soft flesh into a bowl

Add the tahini paste, lemon, minced garlic, and salt. Stir with a fork until the eggplant achieves a creamy texture

Drizzle with extra virgin olive oil and garnish with smoky paprika and chopped parsley

Serve with Superseed crackers and enjoy!
