Pesto is delicious when made fresh and perfect as a healthy snack as it is high in protein, fibre and minerals.
No need to stress about guests' dietary requirements as this recipe has easy substitutes for nut-free and is already gluten-free, dairy-free and vegan. Our crackers are gluten-free, keto and vegan as well!
Vegan Basil Pesto Recipe
Ingredients
- 1 cup roasted salted cashews
- 1/2 cup olive oil
- 1 clove crushed garlic
- 2 tbsp lemon juice
- 1/3 cup savoury yeast flakes
- 1 cup fresh basil leaves
- 1 spring onion sliced
- 1/2 cup fresh parsley
- 2 cups baby spinach
- Pinch sea salt
- Ground black pepper
Method
Place all ingredients into a food processor and blend until well combined. You can substitute 1/3 cup grated parmesan for the savoury yeast flakes for regular pesto. Cashews can be substituted with pine nuts, sunflower seeds, walnuts or almonds!
Now all you need is your favourite Superseed Cracker to serve and enjoy!
