Bean & Bacon Potage Soup


  • 1 onion
  • 4 stalks celery
  • 2 carrots
  • 1 cup kumara or pumpkin.
  • 6 slices streaky bacon -chopped.
  • 1 tsp crushed garlic
  • 1 tin chopped tomatoes.
  • 1 cup chicken stock
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tbsp sugar
  • 2 tins beans - any mix of cannellini, kidney, chickpeas, lima.


1. Peel and dice the vegetables and chop the bacon.

2. In a large pot Sauté the bacon for 5 mins until the fat has come out, then
add the onion, celery, and carrot and kumara for 5 minutes.

3. Add garlic, stock, tined tomatoes, herbs and sugar.

4. Simmer for 20 minutes until the kumara is cooked. Stir regularly, adding
more water if needed.

5. Season to taste with salt and pepper, add the drained beans, bring back to a
simmer and serve.

6. Serve with Superseed Crackers or top with salad toppers.
