Labneh is a Middle Eastern strained yogurt cheese that is tangy and creamy in texture. It is traditionally made by straining yogurt overnight to remove whey, resulting in a thick and rich spreadable cheese.
Za'atar is a popular Middle Eastern spice blend made from a mixture of dried thyme, oregano, marjoram, sesame seeds, and sumac. It has a tangy and earthy flavour profile with a hint of nuttiness from the sesame seeds.
When combined, labneh and za'atar create a delicious and creamy dip that is perfect for serving with Superseed Crackers, vegetables, or as a spread on sandwiches. The tanginess of the labneh pairs perfectly with the bold and aromatic flavours of the za'atar, creating a unique and flavourful dip that is sure to impress.
Labneh Ingredients:
- 2 cups plain Greek full fat yoghurt
- 1⁄2 tsp salt
- 1 tsp freshly crushed garlic
Method:
1. Stir the salt into the yoghurt.
2. Put into sieve lined with muslin cloth, place over a bowl and leave to
drain for 24 hours in the fridge.
3. Transfer the thickened labneh to a bowl and stir through the garlic.
4. Spread the labneh onto a serving plate making a well in the centre.
5. Drizzle with olive oil, za’atar and fresh herbs and serve with
Superseed Crackers.
Za’atar Ingredients:
- 2 tbsp sesame seeds
- 1 tbsp sumac
- 1⁄2 tsp salt
- 1 tbsp chopped fresh thyme.
- 2 tsp cumin
- 1 tbsp chopped fresh oregano or marjoram.
Method:
1. Toast the sesame seeds in a small fry pan stirring constantly
until golden.
2. Add the remaining ingredients to the hot pan, stir well,
remove from the heat, cool.
