A delicious, colourful, crunchy and tangy addition to any cracker. Pairs especially well with cheese or avocado.
Pickling Brine Ingredients:
- 1/2 cup sugar
- 1 cup cider vinegar
- 1 cup water
- 1 tsp salt
- 1 tsp whole pickling spices
Method:
- Combine all of the above in a pot until sugar is dissolved and boil for 5 minutes.
- Thinly slice 2 large red onions into half rings.
- Add sliced onions to the pan of hot pickling liquid.
- Reheat until just boiling, then take off the heat.
- Leave for to cool for 30mins.
- Pack into hot jars and seal.
- Leave to cool.
- Ready within 24 hours to eat as your heart desires! Once opened, store in the fridge.
Zero Waste Tip:
Leftover liquid can be used as a delicious salad dressing! Just add some olive oil.
