Seafood chowder is an age-old classic for a reason. Nothing quite beats a simple, comforting seafood chowder on a chilly autumn day!
Ingredients:
- 2 tbsp butter
- 2 carrots, finely chopped
- 2 sticks celery, finely chopped
- 1 onion chopped
- 3 potatoes, peeled, chopped
- 4 cups seafood or vege stock
- 3 tbsp flour
- 1 cup milk
- 2 cups corn
- 500g fish fillets- cubed
- 500g marinara mix
- 200ml thickened cream
- 2 tbsp chopped fresh chives
- 2 tbsp chopped fresh parsley
Method:
1. Saute onion, carrots and celery in butter till soft.
2. Add potatoes and stock. Simmer until potatoes are soft.
3. Combine 4 tbsp flour with 1 cup milk until it forms a smooth paste.
4. Pour into soup and stir until boiling and thickened.
5. Add fish, marinara mix and corn, and gently simmer for 5 mins.
6. Stir through thickened cream and serve garnished with Superseed salad toppers and crackers for dipping.
