Smoked Fish Pie

My smoked fish pie is a classic comfort recipe passed down from my Mum. You can add any extra cooked veggies to boost the nutritional value and make it more exciting.

I always make white sauce this way, it's so much easier and foolproof. The secret is to stir it continuously until it boils and thickens!

Ingredients:

  • 75g butter
  • 57g flour
  • 500ml fish stock
  • 2 Tbsp fresh parsley, chopped
  • 250ml milk
  • 500g smoked fish, flaked
  • 100g grated cheese
  • 2 cups cooked diced potatoes
  • Optional extras: cooked veggies, boiled eggs.

Method:

1. Put cold chopped butter in a pot with flour, cold stock and milk. Heat while stirring constantly until it thickens and boils.

2. Add grated cheese and parsley, stir until melted.

3. Put the fish, potatoes, cooked veggies and boiled eggs into a greased oven dish.
Pour over the cheese sauce.

4. Sprinkle with 50g more grated cheese.

5. Bake in oven at 180°C for 30 mins until heated through.

6. Sprinkle Salad Toppers over before serving.
