Ingredients:
- 1 cup roasted salted cashews
- 1/2 cup olive oil
- 1 clove crushed garlic
- 2 tbsp lemon juice
- 1/3 cup savoury yeast flakes
- 1 cup fresh basil leaves
- 1 spring onion sliced
- 1/2 cup fresh parsley
- 2 cups baby spinach
- Pinch sea salt
- Ground black pepper
Method:
Place all ingredients into a food processor and blend until well combined. You can substitute 1/3 cup grated parmesan for the savoury yeast flakes for regular pesto. Cashews can be substituted with pine nuts, sunflower seeds, walnuts or almonds!
Now all you need is your favourite Superseed Cracker to serve and enjoy!
